Abstract

The presence of bicarbonate in egg-white was reported by Scholl (1893). His suggestion that egg-white resembles blood serum is in accordance with the pH values given in Table I. Healy and Peter (1925) found a value of p H 8-2 on laying and suggested that fresh white contained both bicarbonate and carbon dioxide.
