Abstract
This chapter covers the morphology, uses, chemical composition (general composition of seed, fruit and extract, as well as volatile compounds in the essential oil, oleoresins, and non-volatile compounds in the fixed oil), medicinal properties (including antioxidant, antineopalstic, antimicrobial, hepatoprotective and acaricidal activities), and quality aspects of the main products (green or dried herb, seeds, seed oil, herb oil, and anethole) of fennel (Foeniculum vulgare).
