Starch- and protein-degrading enzymes: biochemistry, enzymology and characteristics relevant to animal feed use.

Abstract
This chapter discusses the relevance of exogenous starch- and protein-degrading enzymes in the context of farm animal nutrition. The beneficial effects on digestive health, nutrient digestibility, feed utilization and production performances of livestock with the application of starch-degrading enzymes and protein-degrading enzymes are highlighted.
