Study on enzyme‐assisted extraction of the total phenolic content, vitamin C and antioxidant activity from Beta vulgaris var.rubra

Abstract

AbstractBeta vulgaris var.rubra (B. vulgaris) is a plant that is widely distributed in Vietnam, which has been shown to contain phytochemical compounds, including: vitamin C, total phenolic content, antioxidant activity and other substances, that can be used to produce antioxidant extracts and positive benefits for human health. Currently, the extraction process of bioactive compounds by popular methods such as mechanical grinding and ultrasonic extraction has been relatively ineffective. Therefore, in this study, enzyme‐assisted extract was used to enhance the yield of these compounds from B. vulgaris. The aim of this work was to study factors affecting the extraction of these compounds from B. vulgaris such as extraction time (min), different enzyme activities per gram of dried B. vulgaris (substrate, U/gds). These results indicate that, these bioactive compounds, including: total phenolic content, vitamin C, and antioxidant activity from dried extract of B. vulgaris were higher than the control sample (enzymes inactivate or without enzyme), under the extraction condition at 50oC, pH 5.0 after 12 hours incubation with Cell/Xyl (at least 20U/gds). Then, the highest efficiency of the total phenolic content, vitamin C, and antioxidant activity obtained were 13.54 mg GAE/gds, 3.12 mg/gds and 84.21%, respectively.
