Abstract
This article delves into the recent advancements in food processing, exploring their impact on food safety, quality, and sustainability. Alongside safety and quality, the food industry also strongly emphasises sustainability and environmental impact. The adoption of renewable energy sources, the reduction of waste, and the implementation of circular economy principles in the food supply chain are becoming increasingly important. Furthermore, the integration of technologies with other preservation methods, such as antimicrobial agents or modified atmospheres, has shown promising results in enhancing the microbial stability and quality of food products. These innovations possess the capacity to transform the food sector.
