Currently there is a great interest of the science community in extremophile microorganisms, mainly related to the chemical structure and biochemical characteristics. Research has shown the potential of that cell mass such as in the production of carotenoid like bacterioruberin. In this study, process of the cultivation of Halobacterium salinarum biomass with high antioxidant activity is described. Antioxidant activity of the Halobacterium salinarum extract in acetone was studied by HPLC with an amperometric detector. It can be concluded that the antioxidant activity of extracts of halophilic bacteria (5.341 mg/g) exceeds the antioxidant activity of such natural products - recognized sources of carotenoids, such as blueberries and carrots. The obtained results are promising to be used in the agricultural and food industry.
