Abstract
The article analyzes the process of drying rose hips found in the mountainous regions of Uzbekistan. Since rose hips are considered one of the main medicines, it is important to dry them while retaining their antioxidant properties. The blanching technology was applied in a convective dryer for drying while maintaining the antioxidant properties of the object. In the blanching process, a solution of ordinary water and citric acid was used. 1 and 1.5% solution of citric acid were picked up. Rosehips were dried until 16% moisture remained. Laboratory analyses was carried out on dried rose hips. The free radical diphenylpicrylhydrazyl was used to determine the antioxidant properties of the samples. In a laboratory study the antioxidant properties of dried rose hips blanched in a 1.5% citric acid solution remained at a high level. This revealed 190 µl of rose hips, 155 µl of its seeds, 185 µl of its water extract and 195 µl of its alcoholic extract. A mathematical model of a sample with a high level of antioxidant activity in rose hips has been developed.
