Abstract
The general experience of the retail milk trade is that considerable variations exist in the demand for milk and cream at different times of the year, and that these need careful consideration to preserve the proper balance between the supply of, and demand for milk. Different social classes of consumers are also known to exhibit different habits of milk and cream consumption. This paper examines the fluctuations of demand for milk and cream over a 1-year period of four social classes of consumers.
