Abstract

Since man emerged from the hunter-gatherer stage of civilisation dairying has been one of the world's great industries. With an annual production of around 500 million tonnes, it remains so but with growing understanding of the principles of nutrition the dietary role of milk is changing. This article reviews the present status of dairy science and suggests ways in which it might develop.
