Abstract
Perceptions of meat quality are changing dramatically. Though they may be capricious, new considerations are not simply those which allow us to enjoy the meat eating habit, they could determine whether some people will continue to eat meat at all. Though they are unlikely to be of catastrophic consequence for the meat industry worldwide, elements of these will need to be incorporated into our thinking about the quality of meat in its widest sense if it Is to continue to be enjoyed and to contribute to the improved nutrition of the world's peoples.
