Abstract
Carbon - Polyvinylchloride composite electrodes were used to study ascorbic acid, (+)-catechin, (-)-epicatechin, gallic acid and (-)-epigallocatechin in phosphate buffer solutions (pH 5.0 and 7.0) and in a model wine solution pH 3.6 by cyclic, differential and square wave voltammetry. Excellent linearity was obtained for these antioxidant compounds by differential pulse voltammetry and the detection limits at carbon composites ranged from 29 µg/l to 0.45 mg/l for (+)- catechin and were 0.16, 0.15, 0.10 mg/l for gallic acid, (-)- epicatechin and (-)-epigallocatechin, respectively in model wine solution pH 3.6. Differential and square wave voltammetry were employed to determine their electrochemical parameters and to quantify antioxidants at a carbon composite in a model wine solution prepared from the dilution 0.13 % (v/v) of a commercial red wine.
