Abstract
This book chapter reviews the occurrence/sources, chemical structure, classification (according to isomers), physiological effects, metabolism and bioavailability, stability, dosage, and safety of resveratrol as a phytochemical. The various roles of resveratrol in biological systems are also discussed, specifically its role as an antioxidant, platelet aggregation inhibitor and enzyme inhibitor, anticarcinogenic agent, antineoplastic and phytogenic agent, and anti-inflammatory agent. The chapter also describes the health benefits of resveratrol for arthritis, cardiovascular diseases, diabetes, fatty liver/liver protection, skin diseases, weight loss, longevity, and other conditions.
