Abstract
This chapter focuses on the heath benefits associated with the consumption of apple,pear and other pome fruits. The different phytochemicals (phenolic compounds, flavonoids and ascorbic acid) are presented and their biological activities are discussed. The effect of cultivar, maturity stage and pre- and postharvest treatments on the phytochemical content of these fruits are also highlighted.
