Abstract
In response to the shortcomings of low automation, large footprint, and low conversion rate in the traditional solid-state vinegar fermentation process, a drum type solid-state reactor was studied by combining traditional solid-state fermentation with mechanized equipment. The equipment is mainly composed of four parts: transmission system, automatic feeding and discharging, stirring ventilation and temperature control, and fumigation and vinegar pouring system. It can automatically feed and discharge, inoculate, ferment, fumigation and vinegar pouring, and other functions. This article mainly elaborates on solid-state fermentation for vinegar production, introduces the operating equipment and drum reactors in this field, and verifies whether there are differences in the main physicochemical indicators of reactor fermentation for vinegar production compared to conventional equipment.
