Abstract

Food waste is among the most important natural problems that threaten the future. In the last decade, food waste has received increased attention on both academic and societal levels. Food waste (FW) and food loss (FL) are also ecological, economic, and social problems. In developing countries, food handlers are one of the biggest sources of food waste due to lack food safety knowledge. It is figured out that people working in food production companies, such as restaurants and hotels, may cause food waste due to incomplete or incorrect information about food safety. It is necessary to have a clear understanding of the factors influencing food waste-related food handlers' perceptions, knowledge, and behaviours. Examining the hygiene and sanitation habits of food handlers and the level of knowledge of food handlers and their practice in the field are other reasons to carry out this book chapter linking with food waste.
