Abstract
Spices have been extensively used by humans since ancient times to impart health and culinary purposes, which have the potential for disease management. Spices are considered medicinally valuable and hold a significant bioactive compound that is responsible for the promotion and fortification of human health, exhibited through their wide range of specific pharmacological benefits, specifically in the treatment of inflammation. Inflammation occurs through a cascade of actions, including recognition, activation of pro-inflammatory cytokines, and recruitment of cells. The action of anti-inflammatory phytocompounds involves the suppression of pro-inflammatory mediators, which primarily causes the upregulation of inflammatory activity. This chapter investigates the promising anti-inflammatory properties of the bioactive compounds from various spices and their suppressive role.
