Products made from fishery products are easy to decline in quality, for that a coating is needed that is able to improve the quality of the resulting product. Edible film from surimi which is used as a coating on nugget products is able to maintain the quality of fish crackers as seen from the value of water content, protein content, fat content, ash content.
