Abstract

Abstract The purpose of the study is to solve a mathematical model for convective drying of wheat gluten granules in a suspended state and to develop a rational design of the apparatus for its implementation. In the course of the study, based on the analysis of the mechanism of convective dehydration of a granular product in a suspended state, a mathematical model of this process was constructed. This model was adapted to the study object and subject and its solution was carried out. Proceeding from the study of the advantages and disadvantages of well-known installations for drying gluten granulated products, a rational design of an installation for drying gluten granules is recommended. It should be noted that the proposed continuous-action installation, due to its design features, may be suitable not only for dehydration of the granulated semi-finished product under study, but also for drying similar products.
