Abstract
Street foods mostly consist of local, seasonal and fresh ingredients that represent the local culinary cultures of the country or region where they are sold. Therefore, these foods are very valuable for local food habits and play an important role in the preservation of cultural and social heritage. The fact that Cyprus has been under the administration of many civilizations throughout its history has caused the Turkish cuisine culture of Northern Cyprus to have a very rich structure. The development of the island's unique street food gastronomy tourism is also of great importance in terms of the sustainability of the resources and economic gains. The diversity of street foods shows itself in the streets, markets and festivals. In this review, street foods are defined with a global perspective, evaluated in terms of food safety and street foods belonging to the Northern Cyprus culture are mentioned.
