Abstract
The article provides an overview of the literature on the impact of zinc deficiency in food on human health. The global
nature of the problem is emphasized, covering the population of not only developing, but also developed countries.
The study results have been analyzed aimed at investigating the effect of zinc deficiency on the main physiological processes of cultivated cereals, ensuring their productivity. Modern approaches to the biofortification of agricultural crops with micronutrients are considered and the success achieved in this direction is described. It was concluded that distant hybridization coupled with the use of molecular markers is an optimal approach to increasing the nutritional value of wheat grain, including its enrichment with zinc.
