Abstract
The article presents an analysis of the market for enriched and functional flour confections. As a result of the analysis, it was revealed that the market for flour confectionery products from non-traditional raw materials in Russia and in the world is constantly growing, the industry is very promising. Among buyers, adherents of a healthy lifestyle, there is an interest in the use of products with functional properties.
