Abstract

In commercial mesophilic starter cultures, L. lactis is generally more thermotolerant than Lactococcus cremoris , whereas L. cremoris is more prone to autolysis, which is the key to flavor and aroma formation. In this study, we found that adaptation to higher thermotolerance can improve autolysis.
