Abstract

There have been several reports of low molecular weight digestive proteases in the lobster, crab, and shrimp; two crayfish proteases ('alkaline' protease and 'niedermolekular' protease) have been characterized previously in independent investigations. Reciprocal isolation procedures used in the present study suggest that the crayfish enzymes are two preparations of one crustacean digestive protease.
