Abstract

The development of the concept of healthy nutrition in Russian educational institutions is an essential step in the state policy in the field of healthy nutrition for children. Such policies are aimed at ensuring the demographic security, one of the conditions for the safe and sustainable development of Russia. The chapter focuses on the basic principles of the socio-economic model of catering, underlying the concept and reflecting the current trends in the development of school food programs from the Food and Agriculture Organization of the United Nations.
