Due to the excellent properties, Pickering emulsions have been widely applied in the fields of biomedicine, food, cosmetics, agriculture, etc. Nowadays studies on Pickering emulsions have become a hotspot in the science field. This article synthesizes various of literature and reports around the world, conducts an in-depth analysis of the mechanism and influence factors of the stability of Pickering emulisons, and summarizes the function and application in different fields. It is expected to provide reference for further studies and the development of new Pickering emulsion.
