Abstract
The fatty acid esters of Xanthophylls in the flowers of Helianthus annuus L. have been investigated. The pigments taraxanthin = luteinepoxid, lutein, violaxanthin and kryptoxanthin are combined with the saturated fatty acids C18 (stearic-), C16 (palmitic-), C14 (myristic-), C12 (lauric-) and acetic acid. Acetic acid derivatives seldom occur in the field of carotenoids: fucoxanthin and vaucheriaxanthin7 are the only examples. The acetylation prefers the 3-OH of lutein and the hydroxyls near the epoxygroups. The long chain fatty acids are mainly found in the allylic position. No detectable amounts of furanoidic epoxides are present.
